Going Pioneer...

My mom had this wonderful cookbook on her table the last time I visited. I opened the first page and started reading- not expecting how entertaining it could be! Most of you already know about The Pioneer Woman, I'm sure. I, on the other hand, apparently live in my own little world out here in the sticks. I logged on to her website and I've been engrossed ever since! She has the best sense of humor and she's not all cooking. There are links on her blog to photography tips, she home schools, which I personally think is a highway to Hates...but there are some great ideas of things to do with your kids! She has a GREAT website, and I recommend you all link to it from mine on the right...

So, after seeing a few things on her recipe blog, (which is incredibly easy to follow, seriously fool-proof) I went out and bought a cast-iron skillet yesterday. There was a recipe for rosemary rolls I had to try. I LOVE rosemary...more than any other herb. They are done in the cast-iron skillet and they are amazing. Just butter, a little of the magic herb- well, my magic herb that is- and sea salt. I loved them, and the skillet really did make a difference! Try it. This is from her blog, if you go there, you can see her pretty picture of them too! I sent the ingredients to the ladies in my food group, I don't know if they tried them, and their rolls were in a 9x13, bu I can't imagine they wouldn't be every bit as good...tell me what you think!

Buttered Rosemary Rolls

Prep Time: 3 Hours Cook Time: 20 Minutes Difficulty: Easy Servings: 7
Ingredients
  • Frozen, Unbaked Dinner Rolls
  • Melted Butter, Regular, Salted
  • Fresh Rosemary, Coarsely Chopped
  • Coarse Sea Salt
Preparation Instructions

Spray a small iron skillet with cooking spray (or coat with olive oil). Place frozen rolls in the skillet, leaving plenty of room for rising. Cover and allow to rise for several hours.

After rising, brush rolls with melted butter.

Sprinkle on chopped rosemary. Brush with additional butter. Sprinkle with coarse sea salt.

Bake according to roll package directions (usually 400 degrees for 15 to 20 minutes), until rolls are a deep golden brown on top.

Serve skillet on the table.

Make sure you make her apple dumplings. They are on her website, not in the cook book. YOu will die when you read the "secret" ingredient. I get requests for these and they are delicious. I was lucky enough to get to meet her at the cook book signing in Salt Lake in november. She is super cute and funny. Make sure you read her love story, Black Heels to Tractor Wheels which they are making into a movie!! Welcome to the world of PW!!

So glad you found PW. I guess I should have tuned you in months, and months ago. We love the potato bundles. I make them at least once a week. So fast and easy. Thanks again for yesterday. You're a life saver!

Oh, you have got me sick with spring fever! I am so busy making messes that I can't keep up with myself. John had to come over and bail me out of one of them just now. I felt bad that I had to call him to my rescue but, Steve is in St. George til Saturday night. Oh man, I am just not as coordinated as I used to be. One foot on the ladder the other perched precariously on the window sill, arms stretched far beyond what is normal. Seriously, I was in trouble! Good thing my cell phone was in my pocket! Do you know it takes a LONG time for him to get from his house to mine...not to worry I found my way down without falling.
