Potato Bundles

First off, Heidi, if you haven't been on the Pioneer Woman's Website, get in some comfy clothes, get a Diet Pepsi within arms reach and put the kids to bed, cause you'll end up spending some time there. This recipe had step-by-step photographed directions on her website...you just go to the "cooking" tab and on the left, you can search any of her recipes. They are all EASY cause she shows you how to do it ALL! She's totally entertaining and there hasn't been one thing I've tried that I haven't loved! You'll love it too!

As for the potatoes? We don't really do plain old baked potatoes anymore. These are so much better, and they cook a lot faster! And everything is better with cream!
I'll give credit once again to my neighbor Valerie, who suggested I try these...they became a fast favorite!

Potato Bundles (as seen on my previous post!)

Ingredients

* 6 whole Russet Potatoes
* ½ whole Yellow Onion, Diced
* 1 stick Butter
* ½ cups Heavy Cream
* Kosher Salt To Taste
* Paprika To Taste
* Freshly Ground Black Pepper, To Taste
* 2 Tablespoons Minced Parsley

Preparation Instructions

Pile potatoes and onions on a square of foil. Add 2 tablespoons butter. Splash on cream. Then sprinkle on salt, paprika, and black pepper. Sprinkle minced parsley over the top.

Wrap bundles tightly and bake at 375 degrees for 45 minutes, or until extremely tender.

Serve bundles right on the dinner plate. Serves 8.
